with a Flavorful Twist
About a fortnight ago, my wife
underwent cataract surgery. To ensure she had proper care—timely medicines, eye
drops, and assistance with daily household and kitchen tasks—one of our close
women (Bhabhi) relatives kindly came over leaving her family behind. She truly
felt like a God-sent blessing. Not only did she take great care of my wife, but
she also managed the household affairs with ease.
What surprised us most was her
exceptional culinary skill, which we’ve been relishing for the past two
weeks. Every now and then, she treated us to different varieties of mouthwatering
vegetarian dishes, prepared with love and creativity, especially befitting
the auspicious Sawan month.
Women have always played a central
role in the culinary world. From home kitchens to five-star restaurants, their
contributions are deeply cherished. Historically, mothers and grandmothers have
been the torchbearers of culinary traditions, passing recipes and techniques
across generations. Today, women are not only excelling in traditional roles
but are also breaking barriers in fine dining, restaurant ownership, and
global cuisines.
Our guest relative embodies this
very tradition. Today’s breakfast was her delightful Rava Dosa (also known
as Chila in the countryside)—simple yet extraordinary, made magical by her
Midas touch. While savoring it, I asked about her journey in cooking. She
smiled and shared how her fascination began in childhood, watching and
assisting her mother in the kitchen. Over time, that passion blossomed into
remarkable skill, one that now earns her appreciation in family gatherings,
parties, and occasions where her recipes and tips are eagerly sought after.
Her
Rava Dosa Recipe 🥞
Ingredients:
- 1 bowl semolina (sooji/rava)
- ½ bowl yogurt
- Salt to taste
- A little water (for mixing)
- Sliced onion, coriander leaves, green chili, tomato,
capsicum
- ½ tablespoon oil for cooking
Method:
- Mix rava with yogurt, salt, and a little water. Leave
for 30 minutes to soften and ferment slightly.
- Add chopped vegetables to the batter.
- Heat a tawa (hot plate), grease with oil, and spread
the batter thinly using a ladle.
- Cook both sides until crisp and golden.
Coconut-Almond
Chutney 🥥🌶️
- Fry together: coconut, almonds, dry red chili, 1 spoon
gram dal, tamarind, and salt (to remove moisture).
- Grind into a fine paste.
- Temper with dry chili and curry leaves for added
flavor.
The result? A light, healthy,
oil-free, and spice-balanced dish, loved by everyone at the table.
